Best Chipotle Salsa Dip

We went to see these friends for dinner a while back and they had made this salsa as an appetizer. it was so good I could not stop eating it... Since then I make it and it has become a favorite between my friends. The secret ingredient is Chipotle peppers... I had never cooked with them before and now I make all sorts of sauces with it... 6 medium sized plum tomatoes
1/4 cup olive oil, plus 1tsp. for pan
1/4 Spanish onion chopped  - we use red though...but see what you prefer!
2 garlic gloves, minced
1/2 bunch chopped cilantro
1-2 chipotle chilies in Adobo *
juice of 1/2 lemon
salt to taste


Pre-heat oven to 350 F  - cut tomatoes in half sprinkle with salt and drizzle olive oil
slow roast for 45 mins  (this can vary though ...depending on the time you have. We sometimes get them going for longer earlier and just reduce the heat...)

heat oil and sauté onion and garlic until golden brown

When tomatoes & onion & garlic are ready put them all in a food processor or blender and add the cilantro and chilies and blend.

Add olive oil, lemon juice and salt to taste.

* I add one pepper only, but if you like very spicy add one more for a kick. 
But this depends on their size and what you're looking for. They are quite hot...
