Crustless Veggie Quiche

We have a family member who has celiac disease, so I am always on the look out for Gluten Free recipes. I made this one over Easter and it was a hit. The recipe is from my neighboor Sharon Harper. I changed it a little, but it is still delicious. Here you go:


3 grated carrots
2 unpeeled grated zucchinis (place it on a paper towel and squished through to get the moisture out)
1/2 yellow onion chopped
2-3 green onions sliced or chopped
3-4 coves of garlic finely chopped
1 cup of Mexican cheese Mix
1 tsp. cumin
1 tsp. turmeric 
salt and pepper to taste
3 eggs mixed
olive oil


Sautee the onions in olive oil, add garlic and let it brown slightly. Add green onions, zucchini and carrots and seasonings, saute for a couple of minutes. Mix in the eggs.
Pour over a buttered baking dish, top with cheese and bake uncovered for 50 mins on 350°.

I am gonna try this with asparagus and goat cheese next and let you guys know how it goes...
