Heirloom Tomatoes with Soft Mozzarela, Avocado Cream and Mint


nice heirloom tomatoes of various colors sliced in 1/2" slices
1 ball of fresh mozzarella in water *
1 avocado
1 bunch of mint chopped
1/2 cup of mayonnaise
1/2 cup of Greek yogurt
salt, pepper, dried oregano
1 tsp. of hot sauce
2  tbsp. of balsamic reduction
olive oil
juice of 1 lemon
1 tbsp. of cream (optional)


cream the mozzarella with salt, pepper, oregano and 1 tbsp. of olive oil and 1/2 lemon juice
set aside. If are using cream add the cream also.
using the food processor make the avocado cream: cream the avocado with the yogurt and mayonnaise and add salt and pepper to taste as well as the hot sauce and the remaining lemon juice
start setting the tomatoes in a long serving dish. First layer the slices of tomatoes, cover with the creamy mozzarella, spoon the avocado cream and drizzle the balsamic reduction. Add another layer and repeat. At the end top it with the chopped mint
* My inspiration for this recipe was a recipe from a restaurant in Mission Viejo called "Wine Works", next to " Dublin" and they use Burrata (a creamier mozzarella which is mixed with cream), you can substitute for more creamy runny texture
