Red Lentil Dahl

This is my favorite soup to have on a cold day!!

  • 1 bag of dry red lentils 
  • 3 large carrots diced small
  • 1 onion diced small/ 4 garlic cloves diced small
  • 1/2 can of tomato paste  
  • 3 cups of veggie broth
  • salt, pepper, cumin and turmeric
  • 1/2 bunch of cilantro chopped fine
  • 3 tbsp sour cream or Greek yogurt
  • 3 tbsp olive oil

  • wash the lentis
  • heat up 2 tbsp olive oil
  • add onions and sautee till translucent (1 minute or so)
  • add garlic and sautee for another minute
  • add carrot and salt, pepper, cumin and turmeric and brown it for a minute
  • add 1/2 cilantro
  • add 1/2 of broth and tomato paste and stir well, top the pan and cook for a couple of minutes
  • add lentils and left over broth. Add more broth or water as needed and adjust seasoning
  • cook until lentils and carrots are soft. Lentils should start becoming creamy (not al dente anymore)
serve it with a dollop of yogurt or sour cream and the chopped cilantro on top
