This is the salsa I use for tacos and also on top of my "Gratitude Bowls" (which consist basically of rice, beans, sauteed greens and salsa).
Because it has lemon juice and tomatoes it adds the Vitamin C that beans like so much to allow our bodies to absorb the iron more easily.
It is also perfect to eat with chips (my husband always wants to dig in the chips).
Simple and delicious... Here it goes:
Ingredients: (for 2 people)
1 tomato chopped
1/2 yellow onion or red onion chopped
1/2 bunch of cilantro (or parsley) chopped
salt and pepper to taste
juice of one lemon
1 table spoon of red vinegar
2 table spoons of water
Mix all together and let it sit till time to serve. Cover with plastic film and let it chill before serving.
