Biscuits and gravy - Weekender - Breakfast Series

My hubby loves biscuits and gravy. But who wants it with fatty sausages when you can have the exact same flavor and much less cholesterol? Here is the vegetarian version. This will make you feel like you had "the real thing". Promise!


1 package of vegetarian breakfast patties, chopped in small chunks
2 spoons of olive oil or butter
1/3 cup of all purpose flour
3-4 cups of milk (almond milk also works)
chopped parsley (1/3 bunch)
salt and pepper to taste
Store bought Biscuits


Make the biscuits according to package instruction (keep it in a basket with a towel over it to keep it warm.
Saute the sausage in butter and or olive oil. Sprinkle the sausage with flour slowly. Add the milk slowly and keep whisking till the milk dissolves all the flour.
Cook this gravy until it thickens. This could take about 10 minutes. Add parsley, salt and pepper. Cook for another 2-3 minutes.
Arrange the plates with one or two biscuits. Pour gravy over and serve immediately.
