Easy breezy dinner: humus, tadzhik and Costco quinoa and spinash organic cakes and a Greek salad. Home made and healthy (just a little cheating)

Once in a while I don' t feel like doing a large production and making something light and easy can be done pretty fast. I will use whatever greens I have and make a Greek version of salad (add olives , if you have kalamata even better, and feta cheese).

This is what I propose:

Greek Salad: 

Just use whatever you have, greens, tomatoes, olives, cucumbers... Make a quick lemon, salt & pepper and olive oil vinaigrette. Shred good feta and pour on top. Pour dressing when ready to serve.


Now whip a quick tadzhik by peeling and chopping one large cucumber (remove seeds with a spoon, by scooping them out).  Put cucumber pieces and one chopped clove of garlic into a food processor with 1 cup of Greek yogurt, salt and pepper and a squeeze of a lime or lemon and some fresh dill (or any fresh herb you have). Put it in a bowl.


Make the hummus: 1 can of washed garbanzo beans, two table spoons of sesame paste (Tahini), 2 cloves of garlic slightly chopped , juice of one lemon, 2 table spoons of water, salt and pepper.  Pulse it in the food processor till creamy but firm. Put it on a bowl.


Saute the spinach and quinoa cakes from Costco on coconut oil. Add a sprinkle of cumin and turmeric and let it cook for 2 minutes, Flip it and season the other side, cover the pan and cook for another 2 minutes. (you can substitute this this for a veggie burger for eg).

Serve all together with some pieces of pita bread for a quick, healthy and yummy dinner!
