Hard Shell Soy Tacos - Del Taco Style



We try to have Taco Tuesday at home with friends. It saves us a few bucks from going out to order tacos. It is hard to find vegetarian tacos out. There are a few places locally that serve mushrooms tacos, but not much variety out there. I try to take turns between soft and hard shell tacos for variety. It taste like fast food tacos but are so much healthier.
 Here is how it goes:

Ingredients:

1 package of ground soy meat (beef or turkey style)
1/2 table spoon of oregano
1/2 table spoon of chili powder
1/2 table spoon cumin
olive oil and 1/2 cup of veggie stock
salt and pepper to taste
1/2 cup of plain Greek Yogurt or Sour cream
Shredded Mexican blended cheese
6 hard tacos corn shells
1 cup of home made salsa *
Cilantro Rice and black beans **


                                                   Preparation:

* Home made salsa: 

1 tomato chopped
1/2 yellow onion or red onion chopped
1/2 bunch of cilantro (or parsley) chopped
salt and pepper to taste
juice of one lemon
1 table spoon of red vinegar
2 table spoons of water
Mix all together and let it sit.

**Cilantro Rice and Black Beans:

Cook beans according to my recipe "Gratitude Bowl". I cook beans in pressure cooker with cumin, salt, pepper and turmeric. I also add chopped onions and garlic.

For the Cilantro (or parsley) rice just make a pot of plain regular steamed white or brown rice. Saute 1/2 chopped onion and 2 cloves of garlic in olive oil. Add the rice and stir well to get the rice coated in the olive oil and onion and garlic mixture. Add the cilantro and mix well.

Making the tacos:

Saute onions on olive oil till translucent, add garlic after two minutes. 
Add the soy meat and the seasonings (oregano, chili powder, salt and black pepper).
Simmer for a few minutes. Add some veggie stock if it gets too dry.
Remove from heat and serve inside the hard taco shells topped with sour cream or yogurt, cheese and salsa. Serve with the rice and beans. Buen Provecho!
