Heirloom Tomatoes, Micro-greens and Feta Tartare

Sometimes you just want a small salad, that is easy and healthy but still carries a punch of flavor. Here is an idea ... This feeds 2 people


2 medium Heirloom tomatoes chopped
1/2 cup of crumbled feta cheese
1 cup of washed micro-greens
2 table spoons of balsamic reduction
juice of a half of a lemon
2 table spoons of olive oil
salt and pepper to taste


Mix all the ingredients and let it sit for 20 minutes to develop the flavors
