Portobello Mushroom and Blue Cheese Easy Burger


4 large Portobellos, steams removed
1 tablespoon of chopped basil (or any herb you have)
1/2 yellow onion chopped
2 cloves of garlic chopped
1/2 cup of balsamic vinegar
1/4 cup of olive oil
1/4 cup crumbled blue cheese
salt and pepper
burger buns, tomatoes, greens
prepared mayo (mix mayo, yogurt and siracha, salt and pepper)


Preheat oven at 350F
Marinate the mushrooms on the mix of olive oil, balsamic, basil, garlic and onions. Add salt and pepper and let it sit for 30 mins
Place the mushroom caps on medium heat grill and oiled grill for about 10 minutes buttons side up. The mushrooms will have the onions and garlic pieces on top of it as they grill.
Remove the Mushrooms and place in a backing sheet with non stick pan in the oven for another 15 minutes button's side up and add the blue cheese at this point.
Prepare the mayo and spread over the slightly grilled buns. Add the tomatoes and greens and devour it. Yes devour it and then get your second one!!
