This is a simple eggplant dish that can be eaten with a salad or used as an appetizer. Another way to incorporate more eggplant into your diet...Recipe for 2-4 people
Ingredients1 Medium or small eggplant cut in 1/3 inch slices
1 cup of bread crumbs (panko works best for better crunch)
1/2 cup of cheese (I used goat cheese here)
salt and pepper to taste
olive or canola oil to fry eggplant
1/2 cup of regular flower
PreparationSalt the eggplant slices and let sit for 30 mins to remove some of the bitter flavor (you can omit this step if pressed by time)
Rinse the eggplants after the 30 minutes and pat them dry with a paper towel
Heat some olive or canola oil in frying pan
Place the flour, eggs and bread crumbs in separate bowls
Dip the eggplant slices into flower, then eggs then bread crumbs, shake excess crumbs
Cook the eggplant slices till brown and crisp about 2-3 minutes, turn and cook for another minute and remove from heat.
Using a paper towel remove bread debris from pan and add more oil and fry the other slices
Make the eggplant and cheese sandwiches (spoon goat cheese in the middle of each pair of slices). You can also add a slice of tomato and some lettuce and eat them as the main attraction for a veggie burger. You can also add some basil with the goat cheese. If you decide to serve these as appetizers drizzle balsamic reduction on top of the stacks.
Otherwise serve with a green salad and enjoy!
